Montbéliard is a dairy cattle breed originating from the French Jura, now primarily raised in the Savoie region. It is a sturdy and robust animal, with strong, long legs, well adapted to the harsh conditions of the mountainous terrain of Savoie.
The meat is rich and intensely flavorful, making it ideal for dry aging.
